So you're definitely correct in your decision to travel to Madrid by train. Driving into Madrid for the first time would be horrible. Also, parking in cities can be problematic. On-street parking is difficult to find, and costly, and hotels with parking facilities cost more anyway. If you opt for on-street parking, make sure you know the rules beforehand. It's an expensive and time-consuming business if your car is towed away: it happens a lot.
And don't leave any belongings visible in your car. Unfortunately, Seville is just as bad as Madrid for driving, if not worse. So I suggest that you drop off your car in Granada and travel to Seville by either train or bus. An alternative to that is to drive to Granada and then afterwards use your car to travel around the smaller towns and villages of Andalucia that lie between Granada and Seville, some of which are wonderful, and then drop off your car at Seville airport.
There's a cheap bus shuttle between the airport and the city. You could also take a taxi from the airport straight to your accommodation, of course. Most Spanish car hire companies that do one-way hire will allow a drop-off at the airport. The airport is conveniently located to the east of Seville. It's an excellent area for exploring slowly with plenty of very good, reasonably priced accommodation.

I think that the reason you haven't found much about driving along the coast from Barcelona to Valencia is that there's not much of interest along that coast.
